Oatmeal is high in fiber and can be beneficial in helping with digestion
and reducing risk for colorectal cancer.
Ingredients:
- 1 cup dry oatmeal
- ½ cup unsweetened shredded coconut plus 1/3 cup for topping
- 2 tablespoons natural almond butter
- ½ cup ground flax seeds
- ½ cup dark chocolate chips
- 1/3 cup honey
- 1 teaspoon vanilla extract
Preparation :
Mix all ingredients thoroughly and refrigerate for one hour. Form into
2-inch balls, then roll in shredded coconut. Set balls on wax paper and
place in sealed container in refrigerator.
